Following time honoured traditions of knife making, each Dalby Knife is carefully hand made by Simon Dalby.

Over thirty years, as a Toolmaker and Company Director, Simon has developed a passion and eye for high quality, exclusively manufactured products. At the same time his hobbies included collecting Knives from around the world. It was only a natural progression that his two passions merged when he began making his own speciality knives to the finest standards.

Dalby Knives are as unique as they are beautiful. The knives Dalby Knives make fall into three categories.


These knives are fully hand made to the customers or designers specification using the best quality of materials and workmanship. Customers may supply their own designs or choose one created by Simon. These knives are also hand finished and include prototype knives, refurbished knives, hybrid knifes, or custom kit built knives offering a more cost effective alternative but still achieving quality as they are hand finished.
